Cooking with Oranges

Trying to find some new ways to cook with all these oranges I have, so I made orange chicken.  There’s chicken under all that orange.

And orange-balsamic brussel sprouts.  Mmmm, boiling brains.

And added some rice.

And ended up with some really weird lighting (hate winter AND flashes), but tasty dinner.

Orange Chicken Thighs

Juice of one orange, and another orange, sliced

6 chicken thighs

4 tbsp vegetable oil

1 tsp chili flakes

1 tbsp brown sugar

1/4 of a gigantic yellow onion (or half a regular sized onion)

salt and pepper

Mix everything together to coat. Place the chicken into a pyrex dish (I don’t know what size, but it was just big enough to fit the six thighs), place the oranges on top and pour all the juices and onions on that.  Bake at 400 for 30 mins.  Eat.
